Disk bottom

The base is usually a 3-ply disc, with a core of aluminium sandwiched between two layers of stainless steel, bonded to the body of the pot. This is a great format for saucepans and stockpots used mainly for boiling and sautéing; however, for other tasks the lack of heat conduction in the sides can lead to uneven results.

Cross Section of Cookware

Disk bottoms can include a plate which enables the vessel to be used on induction stove tops.
